Put seafood on the menu using frozen seafood cocktail to make this tasty gratin.

Spring Onions

4 medium, finely chopped

Seafood selection

450 g, frozen cocktail, thawed and drained

Lemon Juice, Fresh

2 teaspoon(s)

Medium fat soft cheese

200 g

Skimmed Milk

150 ml

Dill, Fresh

1 tablespoon(s), Chopped

Cheddar cheese

25 g, mature, grated

Black pepper

teaspoon(s), freshly ground


  1. Spray a frying pan with low fat cooking spray and cook the spring onions for 2-3 minutes, until softened. Add the seafood cocktail and cook for 3 more minutes, then share between the dishes. Sprinkle with the lemon juice. Season with black pepper.
  2. Gently heat the low fat soft cheese and milk in a saucepan, stirring until smooth. Add the dill or parsley. Spoon into the dishes and sprinkle the grated cheese on top.
  3. Preheat the grill to medium high. Grill the seafood gratins for 4-5 minutes until the cheese melts and bubbles. Serve at once, with a green salad.Cook these in the oven at Gas Mark 6/200°C/fan oven 180°C for 8-10 minutes, if you prefer.
