These make a delicious (and super easy) starter and are also great as canapés with drinks. Take care not to overcook the scallops.

Ingredients

Red pepper(s)

½ medium, deseeded and finely chopped

Mango

½ medium, peeled and chopped

Coriander, fresh

1 tablespoons, finely chopped

Chives, Fresh

1 tablespoons, finely chopped

Scallops, Raw

12 large, without roe

Lime Juice, Fresh

15 ml

Instructions

  1. Put all the ingredients except the scallops in a small bowl, mix well, then divide the salsa between 12 Chinese-style soup spoons.
  2. Mist a griddle pan with cooking spray and preheat over a high heat. Cook the scallops for 1 minute on each side, or until cooked and golden, and season.
  3. Put a scallop on top of the salsa in each of the spoons, then serve.
