Mushrooms
16 large, stems removed
Calorie controlled cooking spray

Shallots
2 medium, finely chopped
Mushrooms
100 g, mixed, finely chopped
Garlic
1 clove(s), crushed
Rosemary, Fresh
1 teaspoon(s), finely chopped
Thyme, Fresh
1 teaspoon(s), finely chopped
Red pepper
1 medium, finely chopped

Preheat oven to 180°C, fan 160°C, gas mark 4.

Place the mushrooms on a foil-lined baking tray and lightly mist with cooking spray; season with salt and black pepper. Roast for 15 minutes, then pat dry.

Coat a medium pan with cooking spray and set over a medium-high heat. Add the shallots and chopped mushrooms; cook for 10 minutes, stirring frequently, until softened. Add the garlic, herbs and red pepper; stir and cook for 1 minute. Season to taste.

Divide the sautéed veg mixture between the large mushrooms and serve garnished with thyme.
