Umami is the "fifth flavour" that excites our taste buds and heightens our enjoyment of food. It's found famously in roast meat and soy sauce, but also in mushrooms and garlic. You'll see what we mean when you take a bite into these mushrooms!

Ingredients

Mushrooms

16 large, stems removed

Calorie controlled cooking spray

Shallots

2 medium, finely chopped

Mushrooms

100 g, mixed, finely chopped

Garlic

1 clove(s), crushed

Rosemary, Fresh

1 teaspoon(s), finely chopped

Thyme, Fresh

1 teaspoon(s), finely chopped

Red pepper

1 medium, finely chopped

Instructions

  1. Preheat oven to 180°C, fan 160°C, gas mark 4.
  2. Place the mushrooms on a foil-lined baking tray and lightly mist with cooking spray; season with salt and black pepper. Roast for 15 minutes, then pat dry.
  3. Coat a medium pan with cooking spray and set over a medium-high heat. Add the shallots and chopped mushrooms; cook for 10 minutes, stirring frequently, until softened. Add the garlic, herbs and red pepper; stir and cook for 1 minute. Season to taste.
  4. Divide the sautéed veg mixture between the large mushrooms and serve garnished with thyme.
