Mushroom & tomato French toast
Egg, whole, raw
4 medium, raw
White French Stick
Vegetarian Parmesan Style Hard Cheese
2 tablespoons, grated

- Whisk the eggs and milk in a jug. Pour into a shallow dish. Add the bread and turn to coat. Set aside for 10 minutes, turning once.
- Meanwhile, heat the oil in a nonstick frying pan and cook the garlic, mushrooms and tomatoes for 5 minutes. Transfer to a plate and cover to keep warm.
- Wipe the pan and mist with cooking spray. Cook the bread, 2 slices at a time, for 3 minutes on one side. Sprinkle the uncooked side with the cheese, then turn slices over and cook for 2 minutes, or until golden. Serve topped with the mushroom mixture, sprinkled with chives.
