A quick and easy dinner for any night of the week, we’ve used the Zesty chicken sausages for even more flavour.


Ingredients
HECK Zesty Chicken Sausages
10 sausage(s), grilled
Peppers, all types
2 medium, deseeded and sliced
Courgette
1 medium, chopped
Green Pesto
2 tablespoon(s), level
Cherry Tomatoes
250 g
Couscous, dry
100 g
Lemon Juice, Fresh
20 ml
Parsley, fresh
1 sprig(s), fresh, chopped
Instructions

Preheat the oven to 200°C, fan 180°C, gas mark 6. Put the sausages and vegetables (apart from the tomatoes) into a large roasting tin, and toss well with the pesto.

Cook for 25 minutes, before adding the tomatoes and roasting for another 15-20 minutes, until the sausages are cooked through and the vegetables tender.

Meanwhile, cook the couscous according to pack instructions. Stir through the lemon juice and half the parsley, then toss together with the cooked sausages and veggies.

To serve, sprinkle with the remaining parsley.
