Chicken sausage & vegetable traybake
HECK Zesty Chicken Sausages

Peppers, all types
2 medium, deseeded and sliced
1 medium, chopped
2 tablespoons, level
Lemon Juice, Fresh
1 sprig(s), fresh, chopped
- Preheat the oven to 200°C, fan 180°C, gas mark 6. Put the sausages and vegetables (apart from the tomatoes) into a large roasting tin, and toss well with the pesto.
- Cook for 25 minutes, before adding the tomatoes and roasting for another 15-20 minutes, until the sausages are cooked through and the vegetables tender.
- Meanwhile, cook the couscous according to pack instructions. Stir through the lemon juice and half the parsley, then toss together with the cooked sausages and veggies.
- To serve, sprinkle with the remaining parsley.
