Bacon, mushrooms & tomato on toast
Enjoy this delicious weekend breakfast of bacon, mushrooms and tomatoes.
150 g, sliced
Vegetable stock cube
1 cube(s), 200ml stock
Bacon medallions, raw
2 large, thickly sliced

- Preheat the grill. Put the mushrooms into a nonstick frying pan. Add the stock to the pan and simmer for 6-7 minutes.
- Meanwhile, arrange the bacon medallions on the grill rack and cook for 2-3 minutes; then turn them over. Arrange the tomatoes next to the bacon and grill for another 2-3 minutes.
- At the same time, toast the slices of bread. Place the toast on 2 warmed plates. Drain the mushrooms and arrange them on or next to the toast, along with the tomatoes and bacon. Season with black pepper and serve.
