Fresh, spicy and full of crunch, this no-cook dish is a great way to make raw zero hero vegetables shine. It’s great as a light lunch or served as part of a main course dinner.

Ingredients

Cabbage

½ portion(s), medium, red cabbage, shredded

Courgette

1 medium, spiralised

Carrots, raw

1 medium, spiralised

Parsnip, raw

1 medium, spiralised

Spring Onions

2 medium, trimmed and finely sliced

Peanut butter powder

3 tablespoon(s)

Lime Juice, Fresh

2 tablespoon(s)

Agave Syrup

1 tablespoon(s), level

Tamari soya sauce

3 tablespoon(s)

Sesame Oil

1 teaspoon(s)

Rice Wine Vinegar

2 tablespoon(s)

Root Ginger

1 tablespoon(s), grated

Chilli Sauce

1 tablespoon(s)

Chilli flakes

1 pinch

Instructions

  1. To make the satay dressing, put all the dressing ingredients in a bowl, then stir together with a fork until creamy and combined. Set aside.
  2. In a serving bowl, toss together the cabbage, spiralised vegetables and spring onions. Add the satay dressing, toss until evenly coated, then serve.

Notes

For extra protein, top each portion of noodles with 50g griddled tofu.
