Sardines & marinated onions on toast

½ small, thinly sliced
Red Wine Vinegar
1 clove(s), halved
Sardines in brine, drained
1 can(s), drained weight
1 tablespoons, to garnish
- In a small bowl, mix the onion with the vinegar and sugar. Leave to sit for 15 minutes. Meanwhile, lightly toast the sourdough. While the toast is still warm, rub each piece with the cut side of the garlic.
- Top each toast with the sardines. Drain the onions and arrange on top of the sardines. Season with freshly ground black pepper, garnish with parsley and serve.
