- Preheat the oven to 200°C, fan 180°C, gas mark 6.
- Shave the courgettes lengthways into thin ribbons using a vegetable peeler.
- Sprinkle 4 salmon fillets with the lemon juice, then season. For each piece of fish, put 5-6 courgette ribbons on a board, side by side, overlapping by half.
- Top each fillet with a few fresh basil leaves, then wrap the courgette around the salmon, overlapping the ends. Put on a baking sheet and mist with cooking spray. Bake for 10-12 minutes until the salmon is cooked through. Serve with salad.
