Garlic

Pickled gherkins, no added sugar

4 small, drained

Parsley, fresh

Mint, Fresh

Basil, fresh

10 leaf/leaves

Dijon Mustard

Red wine vinegar

New potatoes, raw

600 g

Broccoli, raw

300 g

Salmon, grilled

4 fillet(s), medium

Instructions

  1. For the salsa verde, blitz the garlic, capers, gherkins, herbs, mustard, red wine vinegar and lemon juice in a food processor. Season to taste.
  2. Boil the new potatoes for 10 minutes and the broccoli for 5 minutes, then drain.
  3. Top 4 steamed salmon fillets with the salsa verde, and serve with the potatoes and broccoli.
