Salmon, mint & cucumber baguettes

So simple, but so delicious. This richly flavoured salmon filling is perfect to put in a crusty baguette, and makes a great packed lunch for work or a day spent out and about.

Sainsbury's Bake at Home Brown Baguettes
2 baguette(s), cooked as per pack
Pink Salmon, tinned
1 can(s), medium
Cucumber
½ individual, extra large
Red onion
½ small
Olives, in Brine
9 individual
0% fat natural Greek yogurt
3 tablespoon(s)
Mint, Fresh
2 tablespoon(s)
Lime
1 zest(s) of 1
Lime Juice, Fresh
1 tablespoon(s)
Sriracha sauce
½ teaspoon(s)
Lettuce
4 leaf/leaves, small
Tomato

Instructions

Preheat the oven to 220°C, fan 200°C, gas mark 7, then bake the baguettes to pack instructions.

Use a fork to flake the salmon into a medium bowl. Add the cucumber, onion, olives, yogurt, mint, lime zest and juice, and sriracha, then season to taste.

Halve the baguettes, then split and fill with the lettuce and tomato. Spoon over the salmon mixture and serve.
