Salmon, mint & cucumber baguettes
So simple, but so delicious. This richly flavoured salmon filling is perfect to put in a crusty baguette, and makes a great packed lunch for work or a day spent out and about.

Pink Salmon, canned
1 can(s), medium
½ extra large
Olives, in Brine
0% fat natural Greek yogurt
1 zest(s) of 1
Lime Juice, Fresh
4 leaf/leaves, small
- Preheat the oven to 220°C, fan 200°C, gas mark 7, then bake the baguettes to pack instructions.
- Use a fork to flake the salmon into a medium bowl. Add the cucumber, onion, olives, yogurt, mint, lime zest and juice, and sriracha, then season to taste.
- Halve the baguettes, then split and fill with the lettuce and tomato. Spoon over the salmon mixture and serve.
