Steaming skinless salmon fillets is a quick and healthy way to cook them, and they can be used in lots of delicious ways.
1 fillet(s), medium, steamed, flaked
Egg, whole, raw
2 medium, raw
Semi Skimmed Milk
1 tablespoons, handful, chopped
- Blanch the asparagus for 2-3 minutes. Drain and chop. Mix with the flaked salmon fillet.
- In a jug, whisk the eggs with the milk. Add a handful of chopped fresh chives and season. Heat the oil in a small frying pan. Pour in the eggs and cook for 3-4 minutes. Spoon the asparagus and salmon over one side, then fold. Cook for 1 minute to warm through, then serve.
