Rocket, pink grapefruit & prawn salad

The colours and flavours of this delicious salad are absolutely stunning.

Ingredients

Onion

1 small, red, thinly sliced

Cucumber

¼ individual, extra large, peeled, deseeded and finely chopped

White Wine Vinegar

1 tablespoon(s), or red wine vinegar

Grapefruit

2 medium, pink

Prawns, Peeled & Cooked

225 g, large, thawed if frozen

Prawns, Peeled & Cooked

100 g, small Icelandic variety, thawed if frozen

Rocket

4 portion(s), or baby spinach

Instructions

  1. Put the onion and cucumber into a salad bowl and add the vinegar. Leave for 10 minutes to soften the onion.
  2. Meanwhile, use a sharp, serrated knife to remove all the peel and pith from the grapefruit. Cut them into segments, removing all the membrane.
  3. Add the grapefruit, prawns and rocket or spinach to the salad bowl. Season with a little salt and plenty of black pepper, then toss together and serve.

Notes

Cook’s tip: The two types of prawns add interest - though you could just use 325g of one type, if you'd rather.
