You can roast any type of tomato you like, but a mix of colours looks so good in salads and on top of tarts.
800 g, vine tomatoes
3 clove(s), finely sliced

- Preheat the oven to 160°C, 140°C fan, gas mark 3. Halve the tomatoes and put them onto a large lipped baking tray with the sliced garlic. Drizzle with extra virgin olive oil, season and roast in the oven for 1 hour.
Roasted tomatoes keep well in the fridge, so make a big batch and add them to salads and pasta dishes during the week
