Roasted tomatoes with thyme ricotta

- Preheat the oven to 200°C, fan 180°C, gas mark 6. Put the cherry tomatoes in a roasting tin with the thyme. Mist with cooking spray and roast for 20 - 30 minutes.
- Stir the thyme leaves into the ricotta. Serve with the toasted sourdough slices.
