4 small, plum, thinly sliced
Light Feta Cheese
180 g, crumbled

- Preheat the oven to 200°C, fan 180°C, gas mark 6. Line a baking tray with baking paper. Roll out the pastry and cut out 6 x 10cm circles. Place them on the tray.
- Spread the pesto over the pastry circles, leaving a 1cm border at the edge. Top with the tomato slices and scatter over the crumbled feta. Lightly mist the tarts with cooking spray, then bake for 15-20 minutes or until the pastry is puffed and golden.
- Season and serve warm, topped with the rocket leaves.
