Sweet tomatoes, aromatic basil and tangy feta are irresistible companions in these warm puff pastry tarts, ideal for a light lunch

Ingredients

Ready rolled light puff pastry sheet

240 g

Reduced fat green pesto

65 g

Tomato

4 small, plum, thinly sliced

Light feta cheese

180 g, crumbled

Calorie controlled cooking spray

Instructions

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6. Line a baking tray with baking paper. Roll out the pastry and cut out 6 x 10cm circles. Place them on the tray.
  2. Spread the pesto over the pastry circles, leaving a 1cm border at the edge. Top with the tomato slices and scatter over the crumbled feta. Lightly mist the tarts with cooking spray, then bake for 15-20 minutes or until the pastry is puffed and golden.
  3. Season and serve warm, topped with the rocket leaves.
