Ingredients
Tomato
1000 g, mixed and halved
Garlic
2 clove(s)
Olive Oil
1 tablespoon(s)
Balsamic vinegar
3 teaspoon(s)
Chilli flakes
1 pinch
Caster Sugar
¼ teaspoon(s)
Basil, fresh
1 tablespoon(s), torn
Wholewheat Pasta, dry

Preheat the oven to 180°C, fan 160°C, gas mark 4. Put the tomatoes in a large roasting tin with garlic cloves and season to taste. Combine olive oil, balsamic vinegar, a pinch of chilli flakes and a pinch of caster sugar in a small jug, then drizzle over the tomatoes. Roast for 50 minutes - 1 hour, or until the tomatoes are soft and starting to caramelise.

Remove from the oven, roughly crush with a fork and stir through a handful of torn fresh basil leaves. Cook the pasta to pack instructions, stir through the sauce and serve.
