If you're in need of a quick fix, crumpets make the perfect base for these speedy pizzas.

Ingredients

Crumpet(s)

4 individual

Pesto Sauce

1 tablespoons, level, 4 teaspoons

Dried Mixed Herbs

2 teaspoons, Italian

Sweet piquante peppers

½ jar(s), 150g

Cherry Tomatoes

8 individual, , halved

Onion(s)

½ small, red

Basil, fresh

4 leaf/leaves, , to garnish

Instructions

  1. Preheat the oven to 190°C, fan oven 170°C, gas mark 5.
  2. Put the crumpets onto a baking sheet and spread 1 tsp pesto sauce over each one. Sprinkle with the mixed herbs.
  3. Share the roasted peppers, cherry tomatoes and red onion between the crumpets. Season with black pepper, then bake for 6-7 minutes.
  4. Serve, garnished with basil leaves.
