Sweet potato toasts with roasted broccoli & almonds

Sweet potato(es), raw

Broccoli, raw

200 g

Ground Cumin

1 teaspoons, level

Cream Cheese

  1. Preheat the oven to 180°C, fan 160°C, gas mark 4. Slice the sweet potato into 12 x 1cm-thick rounds. Put on a large baking sheet, mist with cooking spray and bake for 30 minutes until tender.
  2. Increase oven to 200°C, fan 180°C, gas mark 6. Put the tenderstem broccoli in a large roasting tin and sprinkle over the cumin. Mist with cooking spray and roast for 25-30 minutes. Spread the cream cheese over the sweet potato toasts and top with the broccoli. Serve scattered with toasted flaked almonds.
