Ricotta & chia berry jam on toast

Chia seeds are full of omega-3, minerals and antioxidants. Soaking them in cooked berries makes an instant jam that goes well on crusty sourdough toast.
Chia Seeds, dry
- Place blueberries, raspberries and 1 tablespoon of water in a small saucepan over medium heat. Cook, stirring, for 3-4 minutes or until berries are soft and releasing juice. Stir in chia seeds and set aside for 10 minutes or until jam thickens.
- Top toast with ricotta and jam. Serve.
You can use 200g chopped fresh or frozen fruit such as mango, peaches or plums instead of berries, if you like.
