Chia seeds are full of omega-3, minerals and antioxidants. Soaking them in cooked berries makes an instant jam that goes well on crusty sourdough toast.

Ingredients

Blueberries

100 g

Raspberries

100 g

Chia Seeds, dry

10 g

Sourdough Bread

2 serving(s), toasted

Ricotta Cheese

40 g

Instructions

  1. Place blueberries, raspberries and 1 tablespoon of water in a small saucepan over medium heat. Cook, stirring, for 3-4 minutes or until berries are soft and releasing juice. Stir in chia seeds and set aside for 10 minutes or until jam thickens.
  2. Top toast with ricotta and jam. Serve.

Notes

You can use 200g chopped fresh or frozen fruit such as mango, peaches or plums instead of berries, if you like.
