Ingredients

WW Protein Booster Red Fruits

100 g

Baking powder

1 teaspoons, level

Light Brown Sugar

1 tablespoons

Egg, whole, raw

2 medium, raw

0% fat natural Greek yogurt

125 g

Skimmed Milk

80 ml

Raspberries

18 g

Blueberries

18 g

Icing Sugar

1 teaspoons, level

Instructions

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6. In a bowl, combine the WW Protein Booster Red Fruits with the baking powder and brown sugar.
  2. Add the eggs, yogurt and skimmed milk. Whisk into a soft batter.
  3. Reserve 6 of the fruits, chop the rest and add them to the batter. Mix gently with a wooden spoon. Pour the mixture into 6 non stick muffin moulds.
  4. Press the reserved fruits in on top of each muffin. Cook in the oven for 20 minutes. Cool to room temperature and remove from the muffin moulds. Enjoy sprinkled with icing sugar
