Raw courgette pasta with avocado pesto

A healthy, no-cook courgetti dish with an avocado and pesto sauce, topped with cottage cheese.

Courgette
4 medium
Avocado
½ medium, peeled and stone removed
Green Pesto
2 tablespoon(s), level
Lemon Juice, Fresh

Cherry Tomatoes
150 g, quartered
Reduced fat natural cottage cheese
200 g
Spinach
120 g
Wholemeal bread, sliced

Instructions

Using a spiraliser or julienne peeler, slice the courgettes into spaghetti-like strips

Mash the avocado, pesto and lemon juice in a medium bowl until smooth. Add the courgette spaghetti and tomatoes, and mix carefully. Put the mixture onto 4 plates, top with the cottage cheese and season to taste. Serve with the spinach, bread and lemon wedges
