Rainbow veggie slice

200 g, young leaf
1½ medium, or 1 large, peeled and grated
1½ medium, or 1 large, grated
1 medium, deseeded and sliced
1 medium, thinly sliced
Egg, whole, raw
7 large, raw
3 clove(s), crushed

- Preheat the oven to 180°C, fan 160°C, gas mark 4. Put the spinach in a microwave-safe bowl, cover and cook on high for 2 minutes or until wilted. Cool slightly, then squeeze out any excess liquid and roughly chop.
- Put the spinach in a large bowl and add the carrot, courgette, red pepper and red onion. In a separate bowl, lightly beat the eggs, then add to the veg mixture along with the garlic and flour.
- Season well and stir to combine. Mist a 23cm x 33cm baking dish with calorie controlled cooking spray, then add the veg and egg mixture.
- Bake for 20 minutes, or until the egg has set and the veg is cooked, then serve.
