Ingredients
Spinach
200 g, young leaf
Carrots, raw
1½ medium, or 1 large, peeled and grated
Courgette
1½ medium, or 1 large, grated
Red pepper
1 medium, deseeded and sliced
Red onion
1 medium, thinly sliced
Egg, whole, raw
7 large, raw
Garlic
3 clove(s), crushed
Plain White Flour
55 g
Calorie controlled cooking spray

Preheat the oven to 180°C, fan 160°C, gas mark 4. Put the spinach in a microwave-safe bowl, cover and cook on high for 2 minutes or until wilted. Cool slightly, then squeeze out any excess liquid and roughly chop.

Put the spinach in a large bowl and add the carrot, courgette, red pepper and red onion. In a separate bowl, lightly beat the eggs, then add to the veg mixture along with the garlic and flour.

Season well and stir to combine. Mist a 23cm x 33cm baking dish with calorie controlled cooking spray, then add the veg and egg mixture.

Bake for 20 minutes, or until the egg has set and the veg is cooked, then serve.
