Carrots make a great side dish, but the addition of honey, lemon and chives makes them even better!
Baby carrots, raw500 g, Rainbow carrots, sliced length ways

Honey2 teaspoons, level
Lemon Juice, Fresh1 teaspoons
- Preheat the oven to 200ºC, fan 180ºC, gas mark 6 and line a baking tray with baking paper.
- Put the carrots on the tray, mist with cooking spray, then roast for 30-40 minutes until golden.
- Season, then drizzle over the honey, squeeze over the lemon juice and scatter over the chives.
