Rainbow baby carrots with honey & lemon

Carrots make a great side dish, but the addition of honey, lemon and chives makes them even better!
Ingredients
  • Baby carrots, raw
    500 g, Rainbow carrots, sliced length ways
  • Calorie controlled cooking spray
    4 spray(s)
  • Honey
    2 teaspoons, level
  • Lemon Juice, Fresh
    1 teaspoons
Instructions
  1. Preheat the oven to 200ºC, fan 180ºC, gas mark 6 and line a baking tray with baking paper.
  2. Put the carrots on the tray, mist with cooking spray, then roast for 30-40 minutes until golden.
  3. Season, then drizzle over the honey, squeeze over the lemon juice and scatter over the chives.
