This yummy salad has an Indian influence; makes a lovely lunch or light evening meal.

Ingredients

Low Fat Natural Yogurt

2½ tablespoon(s)

Curry Powder

½ teaspoon(s)

Coriander, fresh

10 sprig(s), or fresh mint

Salad leaves

1 portion(s)

Radish

4 medium

Onion

½ small

Cucumber

¼ individual, extra large

Cherry Tomatoes

4 individual

Quorn fillet

140 g

Instructions

  1. Put 2 tablespoons of the yogurt into a shallow bowl and stir in the tikka powder. Add the Quorn roast-style sliced fillets and stir to coat.
  2. Put the remaining yogurt in a small bowl. Chop some of the mint or coriander finely and stir into the yogurt. Set aside.
  3. Share the salad leaves between 2 serving plates. Thinly slice the radishes, red onion and cucumber and arrange an equal amount over each salad. Halve the cherry tomatoes and divide between the salads.
  4. Spoon the Quorn fillets on top of the salads and drizzle them with the yogurt dressing.
