Quorn™ tikka salad
This yummy salad has an Indian influence; makes a lovely lunch or light evening meal.
Low Fat Natural Yogurt
10 sprig(s), or fresh mint
¼ extra large
- Put 2 tablespoons of the yogurt into a shallow bowl and stir in the tikka powder. Add the Quorn roast-style sliced fillets and stir to coat.
- Put the remaining yogurt in a small bowl. Chop some of the mint or coriander finely and stir into the yogurt. Set aside.
- Share the salad leaves between 2 serving plates. Thinly slice the radishes, red onion and cucumber and arrange an equal amount over each salad. Halve the cherry tomatoes and divide between the salads.
- Spoon the Quorn fillets on top of the salads and drizzle them with the yogurt dressing.
