Use a ready-prepared fish pie mix or seafood mix from the supermarket to make this really speedy.

Ingredients

Chorizo Sausage

120 g, diced

Onion

1 large, finely chopped

Red pepper

2 medium, deseed and thinly sliced

Paprika

2 teaspoon(s), level

Chilli flakes

¼ teaspoon(s), level

Tinned Tomatoes

1 can(s), large

Seafood selection

600 g

Olives, in Brine

50 g

Parsley, fresh

10 sprig(s), fresh

Rocket

Instructions

  1. Mist a deep nonstick frying pan with the cooking spray and put over a medium-high heat. Add the onion, peppers and chorizo, stirring, for 2 minutes or until the onion and peppers have softened. Add the paprika and chilli flakes, and stir for 1 minute or until the paprika is fragrant.
  2. Add the tomatoes, along with 125ml water, and bring to the boil. Add the seafood and simmer gently, stirring occasionally for 2 minutes, then add the fish and cook for another 5 minutes, or until the seafood and fish are cooked through.
  3. Scatter over the olives and parsley and serve with the rocket on the side.

You could serve this with a slice of calorie controlled bread.
