Quick seafood stew
120 g, diced
1 large, finely chopped
2 medium, deseed and thinly sliced

- Mist a deep nonstick frying pan with the cooking spray and put over a medium-high heat. Add the onion, peppers and chorizo, stirring, for 2 minutes or until the onion and peppers have softened. Add the paprika and chilli flakes, and stir for 1 minute or until the paprika is fragrant.
- Add the tomatoes, along with 125ml water, and bring to the boil. Add the seafood and simmer gently, stirring occasionally for 2 minutes, then add the fish and cook for another 5 minutes, or until the seafood and fish are cooked through.
- Scatter over the olives and parsley and serve with the rocket on the side.
