Quick salami, roasted pepper and prawn cheat's pizza

Salami
50 g
White Self Raising Flour
150 g
Olive Oil

Passata

Garlic
2 clove(s), crushed
Prawns, Raw
100 g, 8 large peeled prawns
Sweet piquante peppers
100 g, thinly sliced
Light Mozzarella
120 g, torn
Rocket

Instructions

Put the flour, salt and oil in a food processor with 125ml water and whizz until the mixture just comes together. Tip onto a lightly floured surface and knead until smooth. Roll out to a thickness of 1cm.

Lightly mist a 30cm ovenproof frying pan with cooking spray and heat over a medium heat. Transfer the dough to the hot pan and press into the base and sides. Cook, uncovered, for 5 minutes or until the pizza base is crisp and golden.

Preheat the grill to hot, then spread the passata evenly over the pizza base.

Add the crushed garlic and prawns into a bowl, and toss to coat, then arrange the garlic-coated prawns over the pizza base, top with the salami, red pepper and mozzarella. Cook under the preheated grill for 4-5 minutes, until the prawns are cooked through. Serve garnished with the rocket.
