Brown Sandwich Thins

- In a bowl, mash together the quark, garlic and chopped basil, and season to taste.
- Halve the peach and and remove the stone, then cut each half into 5 wedges. Put into a bowl, drizzle over the balsamic vinegar and toss together to coat.
- Toast the sandwich thins, then put the two halves together and top with the quark and herb mixture. Add 5 peach wedges, 2 slices of ham and some basil leaves to each thin, then serve.
