Sweet potato, raw

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6. Place the sweet potato on a baking tray and mist with cooking spray. Season and roast for 25 minutes, then add the broccoli to the tray, mist with more cooking spray and roast for another 15 minutes, until the broccoli is charred. Scatter over the sesame seeds and roast for a final 5 minutes.
  2. Meanwhile, bring a pan of water to the boil. Add the Puy lentils and cook for 20-25 minutes until tender. Drain and set aside. In a bowl, toss the sliced red cabbage with the lemon juice then season and set aside to soften a little.
  3. To make a dressing, whisk together the olive oil, lemon juice then season to taste. To assemble, divide the lentils between bowls, then top with the roasted vegetables, cabbage and 1 carrot, peeled into ribbons. Drizzle over the dressing and serve.
