Pancake Day is one of our favourite times of year. Whether you like yours thin and crispy or fat and fluffy, pancakes are the on-trend food to try, which means there’s more inspiration out there than ever. And yes, you can have chocolate syrup on top!
Egg, whole, raw
2 medium, raw
¼ tablespoons, level
Peanut Butter Powder
Calorie controlled cooking spray
Low Calorie Chocolate Shot Liquid
- Put the mashed banana in a bowl. Whisk the eggs in a jug then add to the banana along with the baking powder and peanut butter powder, whisking until the mixture is smooth and combined.
- Heat a large nonstick frying pan over a medium-high heat and mist with cooking spray. Add 3-4 spoonfuls of mixture at a time and cook for 2 minutes, until the pancakes feel firm and develop dark spots, then flip and cook for another 2 minutes. Transfer to a plate and keep warm. Repeat with the remaining mixture to make 12 pancakes.
- Serve three pancakes per person topped with the banana slices, chocolate syrup and peanuts.
