Prosciutto & fig bruschetta

Low Fat Soft Cheese
½ zest(s) of 1
80 g, 8 x 10g slices
4 individual, quartered
8 sprig(s), roughly chopped
- Put the light cream cheese in a bowl with the lemon zest. Season well and then mix well to combine. Keep chilled until required.
- Lightly toast the sourdough bread. Spread cream cheese over each bread slice. Top with the prosciutto and figs. Sprinkle with mint leaves. Season and serve.
If you can't get hold of fresh figs, this would work well with thin slices of fresh plum or melon too.
