Looking for a delicious snack that can be put together in minutes? Look no further than these Mexican-style layer pots.

Ingredients

Peas, fresh, boiled

100 g

Garlic

1 clove(s)

Lime Juice, Fresh

2 teaspoon(s)

Tomato

2 large, finely chopped

Spring Onions

2 medium, finely chopped

Chilli, green or red

1 individual, finely chopped

0% Fat Crème Fraîche

50 g

Half fat Cheddar cheese

25 g

Tortilla chips

10 g

Instructions

  1. Make a pea ‘guacamole’ by blitzing the cooked peas with 2 tbsp water, 1 garlic clove and 1 tsp lime juice.
  2. Next, make a salsa by mixing the tomatoes, spring onions and chilli with the lime juice. Divide half the salsa between 5 pots, top with the ‘guacamole’, then divide the crème fraîche between the pots.
  3. Top with the remaining salsa and scatter over the cheese. Finish with finely diced mixed peppers and serve with 1 tortilla chip, for dipping.
