Light and lemony, serve on a bed of greens for a light lunch. Change the flavour by swapping lime or orange juice for the lemon.

Ingredients

Prawns, Peeled & Cooked

450 g

Onion

1 medium, red, finely diced

Celery, cooked

¼ stick(s), finely diced

Parsley, fresh

1 tablespoon(s), finely minced

Olive Oil

2 tablespoon(s)

Lemon Juice, Fresh

60 ml

Salt

¾ teaspoon(s)

Black pepper

½ teaspoon(s), freshly ground

Light Brown Sugar

Instructions

  1. Bring a medium pot of water to a boil; steam or boil prawns until they turn pink, about 4 to 5 minutes. Drain and immediately run under cold water to stop cooking.
  2. Place in a medium bowl. Add onion, celery and parsley; toss well.
  3. In a smaller bowl, whisk together oil, lemon juice, salt, pepper and sugar; pour over prawn mixture and toss to combine.
