- Place the rice noodles in a bowl, cover with boiling water and leave to stand for 3–4 minutes until tender, or follow the packet instructions.
- Mix the hoisin sauce with half of the lime juice and set aside. Drain the noodles and combine with the rest of the lime juice, the carrot, cucumber and chilli, and season.
- Warm the wraps following the packet instructions, so that they are flexible and easy to wrap.
- Divide the noodles between the tortillas, placing them across the centre of each one, then drizzle with the hoisin sauce mixture. Add the prawns and a few coriander sprigs, then roll up the wraps. Cut in half to serve.
