Simple, healthy meals like these spicy Mexican-style prawn wraps are a must-have on everyone’s meal plan.

Ingredients

Santa Maria Medium Fajita Seasoning Mix

¼ sachet(s)

Prawns, Raw

300 g

Olive Oil

1 teaspoons

Red onion(s)

1 small, chopped

Garlic

1 clove(s), crushed

Red pepper(s)

1 medium, deseeded and sliced

Yellow Pepper

1 medium, deseeded and sliced

Tinned Tomatoes

1 can(s), large

Old El Paso Super Soft Corn Tortillas

8 individual

Lettuce

4 leaf/leaves, small, shredded iceberg

Reduced Fat Soured Cream

4 tablespoons, level

Chilli, Green or Red

3 individual, red and green jalapeño peppers

Lime(s)

1 medium, wedges

Instructions

  1. Toss the spice and prawns together and set aside to marinate until required. Heat the oil in a large frying pan, add the onion and cook for 3–4 minutes or until it begins to soften. Add the garlic and pepper and stir fry for another 3 minutes. Add the tomatoes and cook over a medium heat until thickened.
  2. Add the prawns to the sauce, cook through until pink and season. To serve, arrange the lettuce, prawns and sauce on the tortillas, add the soured cream and jalapeños plus a squeeze of lime juice, then roll up and eat immediately.

Notes

Serve 2 fajitas per person.
