- Mist a nonstick wok or pan with cooking spray and set over a medium-high heat. Add the roasted vegetables, rice and prawns and heat through.
- Push the rice mixture to the side of the pan, crack the egg in the middle and scramble. Stir the egg into the rice mixture, add the carrots and soy sauce, warm through.
- Season to taste, garnish with the spring onions and serve.
