Ingredients
Avocado
½ medium, peeled, destoned, coarsely chopped
Chilli flakes
1 pinch
Lime Juice, Fresh
1 tablespoon(s)
Wholemeal bread roll
345 g, baguette, split
Lettuce
8 leaf/leaves, small, leaves separated
Mint, Fresh
6 sprig(s)
Cucumber
1 individual, extra large, peeled into ribbons
King Prawns, Raw
12 individual, peeled and deveined
Coriander, fresh
4 sprig(s)
Instructions

Put the avocado, chilli flakes and lime juice in a small bowl and mash with a fork to combine. Season to taste.

Top half the baguette with the lettuce, mint, ribboned cucumber, peeled prawns, coriander and the avocado mixture. Season with ground black pepper then top with the other baguette half. Cut into quarters to serve.
