Prawn & miso noodle soup
This easy Asian-style soup includes choi sum, but you use other green veg, such as spinach

- Fill and boil the kettle. Pour 1.5 litres boiling water into a large saucepan and return to the boil over a medium heat. Add the prawns and noodles, and cook for 3 minutes or until the prawns have changed colour and the noodles have softened.
- Meanwhile, transfer about a cup of the cooking liquid to a bowl. Whisk in the miso paste until dissolved. Return the miso mixture to the pan with the baby choi sum and half the shallots. Cook for 1 minute or until the choi sum has wilted.
- Ladle the soup into serving bowls. Sprinkle with the fried onion and remaining spring onions to serve.
