This easy Asian-style soup includes choi sum, but you use other green veg, such as spinach

Ingredients

Prawns, Raw

500 g

Stir fry mixed vegetables

½ pack(s)

Edamame Beans, cooked

150 g

Rice Noodles, dry

4 portion(s), medium

Miso

100 g, paste

Pak Choi

4 portion(s), use baby choi sum

Instructions

  1. Fill and boil the kettle. Pour 1.5 litres boiling water into a large saucepan and return to the boil over a medium heat. Add stir fry vegetables, prawns and noodles, and cook for 3 minutes or until the prawns have changed colour and the noodles have softened.
  2. Meanwhile, transfer about a cup of the cooking liquid to a bowl. Whisk in the miso paste until dissolved. Return the miso mixture to the pan with the pak choi. Cook for 1 minute or until the pak choi has wilted.
  3. Ladle the soup into serving bowls and serve.
