Prawn and fish burger with avocado aioli

Spring Onions
5 medium, trimmed and thinly sliced
Parsley, fresh

Breadcrumbs, fresh

Reduced Fat Mayonnaise

Poppy seed bread roll

1 leaf/leaves, small
Tomato

Cucumber

Avocado
1 medium, peeled, stone removed, flesh mashed
Garlic
1 clove(s), finely chopped
Reduced Fat Mayonnaise

Coriander, fresh
1 tablespoon(s)
Chilli, green or red

Instructions

Put the fish, prawns, spring onions, parsley, breadcrumbs, lemon juice and mayonnaise into a food processor and season with salt and freshly ground black pepper. Pulse until just combined. Shape into 4 patties, then chill in the fridge for 30 minutes.

Heat a griddle or frying pan to medium, brush the burgers with the oil and cook for 4-5 minutes each side, or until golden. Transfer to a baking sheet and cook in the oven for 5-10 minutes, or until cooked through, or leave the burgers cooking over a low heat for a further 5 minutes each side.

Meanwhile, make the aïoli. Mix the avocado with the garlic, mayonnaise, coriander and chilli. Stir in the lime juice and season.

To serve, top each bun base with lettuce and tomatoes, followed by the fish burgers, cucumber, avocado aïoli and the bun top.
