Honey

Pork tenderloin, raw

450 g

Instructions

Preheat the oven to 200°C, fan 180°C, gas mark 6.

Line a small roasting tin with kitchen foil. In a small

bowl, combine 20g clear honey, 1 teaspoon olive oil,

¼ teaspoon ground cinnamon, ½ grated garlic clove,

5

¼ teaspoon ground ginger and a pinch of salt. Trim any

6

excess fat from a 450g pork tenderloin fillet and pat dry

7

with kitchen paper. Arrange the pork in the prepared tin

8

and brush all over with the honey mixture. Roast for 10

9

minutes. Brush any pan juices over the pork then continue

10

to roast for 10 minutes, or until cooked through. Let rest

11

for 5 minutes before slicing and serving.
