Pork escalopes with Asian slaw & sesame seeds
This is ideal for a midweek meal: the combination of quick-cooked pork and crunchy Asian salad will fill you up nicely, and it’s ready in a flash
Pork Escalope, Raw
Light Soy Sauce
Calorie controlled cooking spray
4 portion(s), medium, white, sliced
1 medium, peeled and grated
1 small, very finely sliced
100 g, halved
Chilli, green or red
1 individual, red, deseeded and chopped
Lime Juice, Fresh
1 inch slice(s), peeled and grated
15 g, chopped
1 tablespoon(s), toasted
- Put the pork escalopes into a shallow dish and spoon over the soy sauce. Set aside to marinate for around 5 minutes.
- Heat a large nonstick frying pan over a high heat and mist with cooking spray. Cook the pork for 2-3 minutes each side, reserving the residual soy sauce, then pour the soy into the pan, letting it sizzle and reduce.
- Meanwhile, mix together all the remaining ingredients with half the sesame seeds. Serve with the pork and pan juices, garnished with the remaining sesame seeds.
