Rolls deliver a bread fix while helping portion control. And if you chose a lovely seeded variety, as we have here, you get an extra dose of taste and goodness too!

Ingredients

Tesco Tex Mex Hickory BBQ Pulled Pork

150 g

Tomato

1 large, deseeded and finely chopped

Watercress

1 bunch(es)

Wholemeal Bread Roll

2 medium, halved

Pineapple in juice, drained

1 ring(s), chopped

Instructions

  1. Cook the pulled pork to pack instructions then set aside to rest for 5 minutes.
  2. Weigh out 150g of the pork and pull apart using two forks (you could use the remaining pork in a salad). Combine the pork with some of the hickory sauce and the tomato in a small bowl.
  3. Put a little watercress in each roll, divide the pork mixture between them, top with the pineapple and remaining watercress and serve.
