Poached apricots with maple pecans
1 individual, halved
6 individual, halved and de-stoned
25 g, chopped, unsalted
0% fat natural Greek yogurt
- Place 300ml water in a small pan (just large enough to take the apricots in one layer) and add the syrup, sugar and vanilla pod. Bring to the boil slowly, allowing the sugar to dissolve, then add the apricots and simmer for 4-5 minutes, or until the fruit is soft.
- Lift the fruit out and drain, turn the heat up, and simmer the liquid for another 12-15 minutes, or until it has reduced and is starting to form large bubbles. Stir in the pecans and cook for another 1-2 minutes until coated and syrupy.
- Serve the apricots with the yogurt, topped with chopped pecans and syrup.
