Nothing is as inviting as the aroma of a fruit-filled crumble wafting from the kitchen. This crumble makes the most of ripe, plump plums and juicy blackberries.

Ingredients

Calorie controlled cooking spray

Plums

4 large, halved, stones removed and thinly sliced

Blackberries

600 g

Plain White Flour

1½ tablespoons, level

Cardamom, Ground

¼ tablespoons, level

Lemon(s)

½ zest(s) of 1

Porridge oats

100 g

Light Brown Sugar

55 g

Dairy Free Spread

50 g

Pistachios

35 g, finely chopped

Instructions

  1. Preheat the oven to 180°C, fan 160°C, gas mark 4. Mist a medium baking dish with cooking spray.
  2. Put the plums, blackberries, flour, lemon zest and cardamom in a large mixing bowl and toss gently to evenly coat the fruit. Spoon the mixture into the prepared baking dish.
  3. Combine the oats, sugar, dairy-free spread and a pinch of salt in a medium bowl. Using your fingertips, rub everything together until the mixture clumps, then stir in the pistachios.
  4. Scatter the crumble mixture evenly over the fruit, then bake for 30-35 minutes, until the crumble is golden and the fruit filling is bubbling. Set aside to cool for 15 minutes before serving.

Notes

Serve each portion topped with 50g plain soya yogurt. The SmartPoints will remain the same.
