Pineapple & Coconut Sparkling Margarita Poptails

This is no traditional margarita, as we’ve used coconut rum in place of tequila, but don’t be fooled! Everything you love about a classic marg is there - zesty lime and the infamous salt rim, but with a tropical twist of pineapple and coconut. Oh, and did we mention for half the PersonalPoints of a traditional margarita?!


Ingredients
Agave Syrup

Lime Juice, Fresh
20 ml
Pineapple Juice
60 ml
Reduced fat coconut milk, tinned (7.7% Fat)
40 ml
Malibu Original Caribbean Rum with Coconut Flavour
60 ml
Lime Juice, Fresh
25 ml
Freshly squeezed orange juice
90 ml
Lemon & lime flavour sparkling water
500 ml

To make the lollies, mix the agave, lime juice, pineapple juice and coconut milk in a small bowl or jug. Stir in 60ml water. Divide between 2 x 95ml capacity WW lolly moulds. Place lid on top and freeze for 6 hours, or overnight, until frozen solid.

To make the salt rim, take the lime that you juiced for the lollies and rub the flesh all around the rim of 2 x 200ml capacity margarita glasses. Place 2 tsp salt on a small plate, then roll the rim of the glasses into the salt to coat. Set aside.

Stir the rum, lime and orange juice in a cocktail shaker or measuring jug. Top with the lime flavoured water, then gently stir. Divide cocktail mixture evenly between salted margarita glasses. Carefully release lollies from moulds and place into glasses. Top with dried lime (if using) and serve.
