It may not sound an obvious choice, but cooking fruit on a barbecue really brings out its sweetness. You can also try these skewers using chunks of kiwi, strawberries and melon.

Ingredients

Pineapple in juice, drained

400 g, cut into chunks

Watermelon

400 g, cut into chunks

Instructions

  1. Soak 12 wooden skewers in water for 30 minutes to prevent burning. Once the skewers are soaked through, thread the fruit onto the skewers.
  2. Cook the skewers on a preheated barbecue for 2 minutes each side until charred.

Notes

Make a more indulgent dessert by whipping up a white chocolate yogurt sauce to drizzle over the skewers. Melt 75g white chocolate, then gently stir in 125g 0% fat natural Greek yogurt and 5 shredded mint leaves. Drizzle the sauce evenly over the cooked fruit for 2 SmartPoints per skewer.
