Pimm's ice lollies

Who can say no to a Pimm’s? Especially when it comes in the form of an ice lolly
300 ml, left to go flat
¼ individual, very thinly sliced
12 individual, hulled and halved
2 sprig(s), leaves picked
- Mix together the Pimm’s and lemonade. Divide the cucumber, strawberries and mint between 8 ice-lolly moulds, then pour in the liquid, to about 1cm below the top.
- Freeze for 1 hour, add the ice-lolly sticks, then return to the freezer for 4 hours, or until solid.
- To serve, stand the bottom of the moulds in warm water for a few seconds to release the lollies.
If using lolly moulds that have bases and sticks attached, add those when you begin to freeze the lollies.
