Pesto chicken quesadillas

These Mexican toasted wraps make great family dinners.


Ingredients
Wholemeal tortilla wrap
4 large
Sainsbury's Lighter Green Pesto
2 tablespoon(s), level
Chicken breast, skinless, grilled
150 g
Light Mozzarella
125 g, sliced
Cherry Tomatoes
8 individual, quartered
Basil, fresh
2 tablespoon(s)
Calorie controlled cooking spray

Instructions

Spread the wraps with ½ tablespoon pesto each. Shred the cooked chicken breast and divide between 2 of the wraps, then scatter over the mozzarella, cherry tomatoes and a small handful of fresh basil leaves on top of the chicken.

Top with the 2 remaining tortillas, pesto-side down, pressing down lightly. Mist a large frying pan with cooking spray and put over a medium-high heat. Add the quesadillas one at a time and cook for 3-4 minutes

Mist the top with more cooking spray, then flip over and cook for 3-4 minutes on the other until golden. Quarter and serve.
