Pesto chicken quesadillas
Tesco Wholemeal Tortilla Wraps
Sainsbury's Lighter Green Pesto
2 tablespoons, level
Chicken breast, skinless, grilled
125 g, sliced
8 individual, quartered
Calorie controlled cooking spray
- Spread the wraps with ½ tablespoon pesto each. Shred the cooked chicken breast and divide between 2 of the wraps, then scatter over the mozzarella, cherry tomatoes and a small handful of fresh basil leaves on top of the chicken.
- Top with the 2 remaining tortillas, pesto-side down, pressing down lightly. Mist a large frying pan with cooking spray and put over a medium-high heat. Add the quesadillas one at a time and cook for 3-4 minutes
- Mist the top with more cooking spray, then flip over and cook for 3-4 minutes on the other until golden. Quarter and serve.
