These yummy, fruity muffins contain no sugar. Perfect to satisfy those sweet cravings and also a good way to use up any over ripe pears - or try apples instead.

Ingredients

Apple juice

2 tablespoons

Low Fat Spread

75 g

Honey

3 tablespoons, heaped, (runny)

Egg, whole, raw

1 medium, raw

Vanilla Extract

2 teaspoons, level

Pear(s)

4 medium, peeled, cored and cut into small pieces - then poached until tender

Blueberries

125 g

White Self Raising Flour

200 g, wholemeal

Baking powder

1 teaspoons, level

Ground Cinnamon

2 teaspoons, level

Instructions

  1. Preheat the oven to Gas Mark 5/190ºC/375ºF and place 20 cup cases into 2 .
  2. Beat together the low fat spread, honey, egg and apple juice until smoothish. Add the pears and blueberries and stir together.
  3. In seperate bowl stir together the flour, baking powder and cinnamon.
  4. Now is when you have to be quick; Combine the wet and dry ingredients only stirring enough to just mix then, immediately, spoon dessertspoonfuls of the mixture into the prepared cases.
  5. Pop in the oven and bake for 12 mins, until risen and golden and just firm to the touch.
  6. Turn out onto a cooling rack still in the cases and serve when cool.
